More than a meal: Dysphagia training at Hamberley Neurocare

At Hamberley Neurocare, we understand that mealtimes are about more than just nutrition—they’re about safety, dignity, and quality of life. Dysphagia, or difficulty swallowing, is a common challenge for people with neurological conditions, making tailored nutrition a crucial part of their recovery. That’s why our team in Camberley recently took part in specialist training to refine our approach to modified diets and ensuring that every meal is both safe and satisfying.

Dysphagia can have serious risks, including choking and aspiration pneumonia, making food and drink preparation a vital part of safe care. IDDSI is a global framework that sets clear guidelines on food textures and drink consistencies, ensuring that people with swallowing difficulties receive meals tailored to their needs. IDDSI helps care teams create meals that are not only safe but also appetising, supporting dignity and quality of life.

During the hands-on session at Hamberley Neurocare Camberley, our kitchen and care teams refined their skills in preparing, testing, and presenting meals that meet IDDSI standards. The session, led by Andy Cullum, focused on:

  • Keeping texture-modified meals moist and visually appealing – storing food correctly and plating just before serving to maintain quality.
  • Ensuring every dish meets safety standards – using the IDDSI spoon tilt, fork pressure, and flow tests to assess consistency. 
  • Improving nutrition for residents with reduced mobility – reducing unnecessary saturated fats while enhancing protein intake.
  • Creative presentation – making meals look appetising, because we eat with our eyes first.
